Overview
Fungu'it uses filamentous fungi and an innovative solid-state fermentation process to upcycle agricultural by-products (flaxseed and sunflower press cakes, legumes) into natural, high-value flavourings. Its flagship ingredients include a meaty umami flavor for plant-based alternatives and a chocolate flavor that can reduce cocoa use by up to 25%, lowering deforestation risk and CO₂ emissions. The process is resource-efficient and significantly reduces water and energy consumption compared with traditional production. Founded in 2022 and led by CEO and co-founder Anas Erridaoui, the startup has stabilized two key ingredients and is targeting the fast-growing plant-based alternatives segment. Fungu'it raised €4 million to industrialize and scale its technology. The company plans to build an industrial pilot plant (several dozen tons per year capacity), patent and industrialise its process, develop a database from hundreds of strain/by-product tests, and strengthen its sales team to accelerate commercialisation.
