Future Cow, founded in 2023 by Leonardo Vieira and Rosana Goldbeck, develops milk proteins via precision fermentation using a digitized blueprint of cow DNA, microbes, and agro-industrial waste. The company has produced a first milk prototype in 15 L fermenters and plans scale-up tests in 200, 2,000 and 5,000 L vessels to move toward industrial production. Future Cow positions its product as molecularly identical to traditional dairy while being free of hormones, pesticides, lactose and antibiotics. It targets a B2B model, supplying bioidentical milk proteins to food and dairy companies for alternative dairy products, chocolates, whey powders and beverages. The startup highlights environmental benefits—claiming a 97% reduction in greenhouse gas emissions, 99% less water use and elimination of animal cruelty compared with conventional dairy. Future Cow has been selected for the FoodTech World Cup semi-finals and CNPEM’s Deeptech Acceleration Program (PACE) as it prepares for market and regulatory processes with ANVISA.
