Overview

Glutensens is a Milan-based 2023 spin-off from the University of Milan developing a bio-sensor that detects infinitesimal traces of gluten in minutes by combining advanced electrochemistry and artificial intelligence. The sensor returns an immediate digital result archived in the cloud and can be linked to HACCP systems used by restaurants, canteens, laboratories and food manufacturers. The company closed a €1.05 million seed round led by Farming Future (CDP Venture Capital) and had previously secured a €204k seed investment from Farming Future in 2024. The new capital will fund development, validation, production and certification of the bio-sensor with accredited labs and the University of Milan, and will support expansion of the R&D team. Glutensens plans to implement a sales force in Italy and Europe, subsequently extend the platform to other allergens and launch Detection-as-a-Service offerings. Co-founders named in the article include Chiara Di Lorenzo (co‑founder and chief scientific officer) and CEO Andrea Zanella; the company emphasizes rapid detection and measurement precision as a way to improve food safety and reduce recalls, laboratory costs and reputational risk.
