Lexington Bakes produces chilled oat bars formulated with sprouted oats, maple syrup, brown butter, dates, vanilla and salt. The company launched two flavors — maple brown butter and raspberry crumble — and says the sprouted oats are easier to digest, contain no refined sugar, and have 50% less sugar than its indulgent treats. Its chilled oat bars have been distributed through San Francisco-based online grocer Good Eggs for the past two months. Lexington is focused on growing its direct-to-consumer business and has hired part-time staff and agency support to scale. The startup recently raised funding intended to support a transition from self-manufacturing to co-manufacturing.
