Overview
Founded in 2021, MATR Foods develops clean-label, plant-based meat substitutes by applying traditional fungal fermentation to locally sourced Scandinavian ingredients such as oats, split peas, lupins, beetroots and potatoes. Its flagship product, MATR Fungi Mince, delivers a meat-like amino-acid profile while generating just 1.5 kg CO2e per kilogram—94 % less than beef—without additives or heavy processing. Current listings include Gasoline Grill, Sticks n’ Sushi, Mother Pizza, Sokkelund Brasserie, Meyers canteens, Nemlig.com, Alma and Aarstiderne. The company plans to scale production at its Ansager site to 4,000 tonnes annually, a move expected to create about 60 jobs and serve customers in Denmark, Germany and Switzerland. This expansion will add a new production line targeted to be operational by early 2027. MATR Foods positions itself as both a nutritious and sustainable alternative to conventional meat, aiming to combine deep umami flavour with a markedly lower carbon footprint.
