ProteinDistillery, based in Ostfildern, Germany, develops a new generation of clean and sustainable proteins for food companies using microorganisms. Its core product, Prew:tein™ (patent pending), is a functional, plant-based, non-novel food protein ingredient made from upcycled brewer’s yeast and positioned as a clean-label alternative to egg whites. Prew:tein™ offers nutritional and functional properties such as binding, emulsification, and taste enhancement, and is targeted at applications including meat alternatives, dairy alternatives, egg replacement, and baked goods. The company is led by co-founder and managing director Marco Ries. ProteinDistillery plans to use its recent funding to support growth, market entry, and partnerships in the food industry. It also intends to launch a protein-competence center in Southern Germany, in Heilbronn.
