Founded in 2015, Purezza operates restaurants in Bristol, Brighton, Camden, and Hove and is known for its plant-based pizzas and a proprietary mozzarella made from Italian brown rice. The company spent over two years developing its own-line mozzarella and also produces raw cashew cheeses, a ricotta-style cheese, and a creamy coconut cheese. Purezza says its mozzarella has fewer than half the calories and fat of traditional mozzarella. The business is preparing a retail push with a new 8,000 square foot retail space in Brighton to sell its mozzarella. Management plans both to expand its UK presence and use a global network to develop overseas markets. The company has completed fundraising activity that has supported these growth and retail plans. Purezza is the UK’s first vegan pizzeria with sites in Brighton (St James’s Street) and Camden, London. The company is known for making its own range of vegan cheeses for its Neapolitan-style pizzas and has unveiled Mozzarella 2.0, a lab-crafted dairy-free mozzarella alternative based on rice milk. Mozzarella 2.0 is free from common allergens such as soya, gluten and nuts, made from all-natural ingredients, palm-oil free, lower in saturated fat and cholesterol-free. Purezza plans to open a dairy-free cheese factory to produce and distribute the mozzarella to stores, restaurants and its growing restaurant chain. The business has operated in Brighton since November 2015 and opened a London branch in March 2018; it is seeking further investment and considering a Crowdcube crowdfunding campaign. Co-founder Tim Barclay said the recent investment sets the wheels in motion for the company’s expansion.
