Overview
Rebread conducts R&D and produces food products from dried, unsold bread, aiming to turn stale bread from waste into reusable raw material. The project originated two years ago in Kraków with founders Katarzyna Młynarczyk and Bartłomiej Rak, owners of the artisan bakery Handelek. Its work covers drying, storage and processing techniques and includes ready recipes for spices, distilled spirits, beer, kvass and new bakery products. Rebread also explores non-food applications such as cosmetics, packaging, biodegradable 3D-printing feedstock and mushroom substrates. The team plans to share part of its recipes and technologies freely with bakeries, manufacturers and individuals to reduce food waste at scale. The company cites the scale of the problem—Poland wastes about 2 million tonnes of bread annually—and aims to expand solutions across Poland and Europe; it recently secured financing of 1 mln zł from AUGERE HFF.
