Skinny Butcher produces plant-based chicken products—tenders, breasts, nuggets and patties—using pea protein and a proprietary spice blend the company says makes them indistinguishable from real chicken. The startup plans a market launch in grocery stores and via virtual kitchens, and is currently available for delivery in Chicago. Chicago restaurant Wow Bao is partnering with Skinny Butcher to create a virtual kitchen menu (chicken parmesan, jumbo tenders, chicken Caesar salad) for delivery, with REEF Kitchens handling production. The company is led by the founders of Garden Fresh Gourmet, which sold to Campbell's Soup in 2015 for $231 million. Financially, Skinny Butcher is funded with $10 million from Valor Siren Ventures, a food-focused fund affiliated with Valor Equity Partners.
