Veggie Grill is a premium fast-casual brand founded in 2006 that offers craveable, veggie-centric food built from seasonal vegetables, fruits, grains and nuts. Its menu includes bowls, entrée salads, hot sandwiches, home-style plates and house-made desserts across 28 West Coast locations. The company positions itself as a differentiated, modern veggie-based restaurant concept within the fast-casual space. Veggie Grill emphasizes bold flavors and convenience while targeting consumers shifting toward “veggie positive” thinking and eating. The company plans to use the new capital to expand into new U.S. markets and grow existing markets. Following the raise, Brentwood Associates remains the largest single shareholder. A large part of the capital came from private equity firm Brentwood Associates, whose partners Bill Barnum and Rahul Aggarwal will join the company’s board of directors. Veggie Grill intends to use the proceeds to continue to double its restaurant count within the next 18 months, with planned openings in Los Angeles, Orange County, San Diego and Seattle in the first half of 2013. Veggie Grill is a Southern California feel-good comfort-food brand offering 100% plant-based soups, salads, burgers, sandwiches and desserts made on premise daily. The chain recently opened its seventh location at the Original Farmers Market in Los Angeles and is preparing to expand outside Southern California for the first time, with locations in Washington and Oregon forecast to open in the first half of 2012. CEO Greg Dollarhyde, who joined in April, is leading a strategic growth push alongside co-founders T.K. Pillan and Kevin Boylan. The company reported year-to-date revenue growth of more than 70% over last year and says it is on track to double within the next 15 months. Veggie Grill highlights signature menu items such as the “Santa Fe Crispy Chickin’” and the “All Hail Kale” salad as part of its effort to redefine comfort food. The company has partnered with Brentwood Associates to support its planned expansion.
