Founded in September 2021 in Rome, Yeastime has developed a plug-and-play, patented ultrasound system that can cut fermentation times by up to 30 % without compromising product quality. The technology is currently being piloted with craft beer producers, making fermentative workflows faster, more controllable, and more energy-efficient. Management plans to extend its application to dairy, precision-fermented proteins, biotech ingredients, cosmetics, and nutraceuticals by accelerating microalgae growth, as well as to biofuel production and wastewater purification to support circular-economy goals. Ongoing research with the Biology Department of the University of Tor Vergata is validating these wider use cases. Proceeds from the latest funding will be directed toward new hires and expanded R&D to move the solution toward full industrial scale. Since inception, the company has secured roughly €1.2 million in total funding, including the newly announced round.
