Zero Acre Farms develops a new category of oils and fats produced by feeding microbes in fermentation to harvest the oils they produce. The company says its fermentation process yields oils that can be used 1:1 in recipes, with cleaner taste and reduced harmful fumes at high temperatures. Zero Acre has scaled manufacturing to "thousands and thousands of liters" and plans a consumer debut later this year, with branding and packaging to be revealed closer to launch. CEO and co-founder Jeff Nobbs says the product aims to be both healthier for people and less resource-intensive than conventional vegetable oils, addressing deforestation concerns. The approach focuses on selecting organisms that naturally store energy as fats and optimizing fermentation parameters rather than highly complex precision fermentation. The company positions its product for ethically minded consumers at a premium price point while emphasizing functional parity with existing oils.
