Sufresca designs a GRAS-certified, breathable edible coating intended to extend the shelf life of produce while allowing continued metabolism to preserve freshness and nutrition. The team focuses on products that currently lack practicable coatings, including cucumbers, tomatoes, onion, garlic and pepper. Founders include Prof. Amos Nussinovitch of The Hebrew University, Prof. Haim Rabinowitch and Dr. Yoni Elkind. A core piece of the company’s IP covers edible morpholine developed in collaboration with the Hebrew University. Management says the coating can extend shelf lives by several weeks and reduce the need for costly refrigerated storage. The company has raised a total of $1.3 million to date and expects some products to reach North American and European markets within two years.
