Those Vegan Cowboys engineers microbes through precision fermentation to manufacture recombinant casein, the key protein that gives dairy products their melt, stretch and mouthfeel. The company claims its process uses one-fifth of the land and water of conventional dairy and cuts carbon emissions by up to 95% while eliminating methane entirely. Its casein reportedly stretches five times more than traditional versions and melts at lower temperatures, and the firm is already co-developing cheeses and milk chocolate with more than 10 food companies, including dairy majors Westland Kaas and Hochland. Having self-affirmed GRAS status in the U.S., it plans a commercial launch with a partner later this year and is preparing regulatory filings in Singapore, Europe and the U.K. Future expansion includes a €100 million dedicated manufacturing plant targeted to start construction in 2028, financed 50% by senior debt and supported by prospective equity raises of €15 million in 2028 and €25 million in 2029. The startup also intends to stage public tastings in the Netherlands and to showcase products at trade fairs as regulations allow. Operating with a frugal approach and validated technology, Those Vegan Cowboys positions itself at the intersection of sustainability and food security.
