Demetria builds an AI-based data intelligence platform and data cloud that fingerprints and tracks green coffee beans to identify biochemical markers and match each bean profile to the industry standard coffee flavor wheel. The company uses portable near infra-red (NIR) sensors to analyze beans and provide full traceability throughout the commodity value chain. Its platform is designed to power producers and roasters with insights that affect pricing and the livelihoods of coffee farmers. Demetria completed a pilot with Carcafe, the Colombian coffee division of Volcafe/ED&F Man, and is working with the Federación Nacional de Cafeteros (FNC) to develop apps for farmers and transaction points. The startup emerged from stealth and is preparing to launch a suite of SaaS-based solutions. Leadership includes co-founder and CEO Felipe Ayerbe and co-founders Eduardo Shoval, Salomon Kassin and Yori Nelken.
