Food Brewer grows plant cells extracted from cocoa and coffee plants in fermentation-style tanks to produce powdered cocoa and coffee. The company has a patented, time-efficient process to identify and establish cell lines, which typically take a few weeks to complete. Its cocoa cell line can already produce at kilogram scale; the coffee cell line is still being fine-tuned. Food Brewer works with a German machine builder to adapt brewery fermentation tanks for production and has filled its first tank on the Horgen campus. The team has grown from one to 17 people over the past 18 months, and Mathilde Dupin recently joined as head of finance and strategy. The company is focusing on B2B customers while pursuing regulatory approval as a Novel Food over the next three to four years.
