Rebellyous Foods is a Seattle, WA-based food manufacturing technology company that makes plant-based meat products designed to compete on price with traditional chicken. It began selling its plant-based nuggets in February at prices comparable to frozen chicken nuggets and targets cafeterias such as hospitals and schools; one early client was Swedish Medical Center in Seattle. The company says its nuggets have roughly 40% less saturated fat and sodium, three times as much fiber, and are cholesterol-free, and lists wheat and soy proteins, breading, canola oil, cornstarch and seasoning among ingredients. Rebellyous has about 10 employees and currently makes food in South Seattle, with plans to expand to a larger facility as it scales production. Lagally says the team redesigned production equipment and automated operations to make products faster and less expensive, and is working on emulsification and lower-oil frying methods.
