    Mush Foods develops chef‑crafted mushroom mycelium blends (branded 50Cut) designed to be mixed into ground beef, poultry, and fish dishes to boost flavor, nutrition, and sustainability. The company uses a proprietary, highly efficient above‑ground cultivation technique to rapidly grow culinary‑grade mushroom roots. Mush Foods launched its 50Cut product line in the U.S. following an earlier restaurant introduction in Israel. The product is targeted at the restaurant and foodservice market as a flavor‑first ingredient to help reduce meat consumption while improving cost and environmental impact. The team includes CEO Shalom Daniel, researchers Dan Levanon (Ph.D.) and Idan Pereman (Ph.D.), and Culinary Director AJ Schaller, along with food technologists and R&D staff. Financially, Mush Foods closed a $6.2 million seed round in 2023 and was named a Grow‑NY Food & Agricultural Business Competition winner. Mush Foods is an Israeli-based food-tech company that cultivates mycelium for the food and beverage industry. It upcycles food and agricultural waste to create a growing substrate for various mycelium species, which the company says yields a low carbon footprint and rapid growth (eight to ten days). Its flagship product is the 50CUT mycelium protein ingredient, designed for hybrid blended meat products and also usable as a standalone meat replacement. Mush Foods has tailored mycelium blends to mimic beef, poultry, fish, and pork. The company’s stated mission is to cut global meat consumption in half by providing alternative meat ingredients. The recent $250,000 award from the Grow-NY competition will support scaling and further development of its ingredient offerings.
