The business emphasizes replacing inefficient manual, paper-based processes to improve efficiency, scale, and sustainability for food manufacturers. Novolyze produces powdered, ready-to-use non‑pathogenic microorganisms that mimic common foodborne pathogens (salmonella, listeria, E. coli) so manufacturers can validate processes like baking, pasteurization, extruding and drying without bringing pathogens into facilities. The surrogates are designed to reduce the cost and logistical burden of validation — Novolyze claims a 70% reduction in overall validation cost and eliminates the need for on-site consultant preparations. The company has contracts with ten major global food players and is running a pilot with Australia’s GrainCorp through the Terra Accelerator. Novolyze operates in France and the United States with offices in Dijon, San Francisco, and Cambridge, MA; the company was founded in 2012. Management said it expects roughly €1 million in revenue in 2018. Using the new funding, Novolyze plans to expand market share in Europe, the US, and Asia and to launch a digital product for verification of food safety processes in mid‑2018.
