Prime Roots, led by founder and CEO Kimberlie Le, produces sliceable plant-based deli meats and charcuterie made from koji. Its product line includes flavors such as turkey, ham, salami, pepperoni, as well as bacon, pâté and foie gras. The products are designed for use in deli counters and restaurants and contain no nitrates, preservatives, cholesterol, soy, or wheat and are lower in sodium. The company raised a $30M Series B that brought its total funding to approximately $50M. Prime Roots intends to use the funds to scale production and expand distribution into deli counters and restaurants nationwide.
