Overview
The Protein Brewery makes Fermotein, a mycelium-derived mycoprotein powder produced via non-sterile biomass fermentation of a Rhizomucor pusillus strain. The company highlights that its strain cannot produce mycotoxins and that its high-temperature, low-pH, non-sterile process yields lower capital and operating costs versus other fermentation approaches. It plans to supply about 600 metric tons from its demo-scale factory in Breda in 2027 and scale production capacity to more than 2,000 tons by 2029.
