The Protein Brewery makes Fermotein, a mycelium-derived mycoprotein powder produced via non-sterile biomass fermentation of a Rhizomucor pusillus strain. The company highlights that its strain cannot produce mycotoxins and that its high-temperature, low-pH, non-sterile process yields lower capital and operating costs versus other fermentation approaches. It plans to supply about 600 metric tons from its demo-scale factory in Breda in 2027 and scale production capacity to more than 2,000 tons by 2029. The firm is pursuing commercial traction in Europe, Singapore and the U.S., with sales push into Europe planned for Q3 and first U.S. products expected in late 2026. The Protein Brewery is funding human clinical studies, including a large study with Wageningen University on biomarkers of aging in Q1 2027, and is updating regulatory submissions globally while addressing FDA feedback on its GRAS filing.
