Sundial Foods uses a proprietary protein-structuring process to recreate whole chicken wings from plant ingredients, including skin, muscle and bone. Its first product is a whole-cut vegan chicken wing made with just eight ingredients and no synthetic additives. The company emphasizes less heavy processing than many plant-based meats, leveraging intrinsic starches and fibers to generate fibrous texture and a cohesive three-dimensional product in one shot. Co-founders Jessica Schwabach and Siwen Deng say the method avoids later assembly and focuses on automating production. Sundial plans to launch in Bay Area restaurants in spring 2022 before expanding to other US locations and will commence production at the Rutgers Food Innovation Center in Bridgeton, New Jersey. The $4M seed will fund team expansion and production scale-up as it prepares for market entry.
