Overview

SLoFIG was founded in January of 2011 by a group of investors brought together under the auspices of Fresh Taste, a partnership of several foundations and the City of Chicago. Its members shared an investment philosophy that focused on the importance of building community wealth through a healthier local food chain. Their goal is to help rebuild and re-localize the regional food chain, while seeking a profitable rate of return. Members of SLoFIG are committed to nurturing an interconnected web of entrepreneurs and small businesses that provide diverse communities access to healthy, sustainably grown foods.

  • Phyter Food

    Phyter Food is a West Chicago, IL-based creator of refrigerated, vegetable-based nutrition bars. Its bars are handcrafted and cooked in small batches with farm-fresh vegetables or fruit as the first ingredient, and are organic, kosher, vegan, and free of GMOs, gluten, soy, dairy, chemicals, preservatives, and added oils or fats. Available flavors include Sweet Potato + Coconut, Butternut Squash + Peanut Butter, Cranberry + Strawberry, Beets + Cocoa, and a Kale + Apple flavor that will be in stores next year. Phyter refrigerated bars are sold at all 52 Whole Foods stores in the Midwest and at retailers and locations across the Chicago metropolitan area, including Sunset Foods, The Grand, and Equinox health clubs. The company was created by Chef David Choi Jr. and is also led by Gloria Athanis and Jeff Adeszko. The startup raised $1M in funding to purchase kitchen equipment needed to fulfill orders from Midwest retailers and to begin a marketing program.

  • The Eastman Egg Company

    The Eastman Egg Company combines locally sourced, humanely raised ingredients with mobile technology to deliver what it calls “a radically better breakfast.” Launched with a single food truck in 2013, the company now operates two brick-and-mortar stores and a coffee café inside Trunk Club while pursuing the $27.4 billion U.S. breakfast market. Its proprietary mobile app supports an end-to-end customer experience and helps the team meet an operational goal of serving guests in under four minutes. Menu items feature cage-free eggs and other sustainable ingredients from local providers, reinforcing the brand’s values-oriented positioning. The leadership team brings experience from Lettuce Entertain You, Momofuku, AVI FoodSystems, and others, and continues to refine operations for speed and hospitality. Recent funding will finance two additional locations and the next iteration of the mobile app, supporting continued rapid growth.
